from observation, stalls selling ramen usually have the characters 中華 displayed on their noren.Here is another stall, just outside the Shinjuku Station in Tokyo.


Chashu ramen on shoyu soup base. There are 3 main choices of ramen soup base - shio (salt), shoyu (soy sauce) and miso.
